fat free water!!!

I visited a friend in the hospital today and she had a spare sugar packet on her food tray that said the following: "Low Sodium Sugar".

Wow! How cool!! Golly-gee, how _did_ they make sodium-free sugar? Man, science today is soo amazing. I can't wait until they come out with fat free water! or low calorie oxygen!

Ok, I know that as the daughter of two chemists, I can be a bit of a science snob, but this is crazy. How is it that the average man or woman in America can tell you who Brad Pitt used to be married to but does not understand what salt is? (No wonder people have a hard time "believing" in evolution).

I note the term "low-sodium sugar". It would seem simple enough to make sodium-free sugar but maybe the processing requires salt somehow. But, in defense of the obtuse set (well more than avg i mean), I had no idea that sugar had any salt in it in the first place. And I wonder how many people do actually know that (I do! and I'm going to use that knowledge to be one of those people who makes sure you know they're smart). Anyway, just random thought while catching up on your blog.
